Cheesy Lamb Omelette
INGREDIENTS
2 large eggs
1 teaspoon oil or butter
Caramelized onions (leftover from smash burgers)
Queso cheese (leftover from tacos)
Shredded lamb (use BBQ or birria leftovers)
DIRECTIONS
Heat oil or butter in a skillet over medium heat.
Beat eggs and pour into the skillet.
Lift gently and tilt to let uncooked egg flow underneath as the edges set.
Add caramelized onions, queso cheese, and shredded lamb to one side.
Fold the omelette and cook another minute or until heated through.
